A remaster already exists! It's called OpenMW and runs on top of old Morrowind. Not UE5, but it still cleans up the game nicely - and more importantly makes it easy to add the *amazing* expansions from Tamriel Rebuilt and Project Tamriel! I feel that for most free software projects the UX part is the most difficult and requires almost as much politics as it does UX expertise to get anywhere. So any project that doesn't make a conscious effort to avoid it inevitably ends up with a totally arcane and calcified UI, that 'works for me'.

For example: Frans Bouma's Unreal Engine Unlocker is a tool that (among other things) restores the console in UE games, and it functions like any console.
