NYC is working on its own version of this, to bring oysters back to the waterways around the city (www.billionoysterproject.org).
They won’t be eaten, these are purely for environmental benefits. Oysters are tremendously beneficial for polluted waters; a single adult (palm-sized) oyster can filter nearly 200L of water each day. The reefs also provide a shore break against storm surges and protect the coastline from erosion.
