Let me know if you figure it out. I grow rugosa and foeniculum and I "think" foeniculum has a little more fennel taste and rugosa leans a little toward mint. But I'm not sure. Haven't thought about sweetness. I'll pay attention next time I organolepticize them.

Citrus hystrix - makrut lime, Thai lime, and one other common name I won't use because it is a racial slur. The leaves are used primarily in Southeast Asian cuisine, although the fruit is used sometimes. I dried them and will use them in coconut-based soup and to garnish and flavor mocktails.

The lumpy green ones are makrut or Thai limes, formerly known by a racial slur name that I won't use. It is Citrus hystrix. Processing them now. Will post more info soon.
