I’m actually in favor of the penicillium candidum falling out of favor. Cheeses are more interesting when the rinds have complex, as opposed to mono, cultures. I Look at the rinds in Europe & swoon. But my customers want pure white because they equate that with “good” cheese. I want rind variety!
I believe you can find Vermont made Jasper Hill cheeses and Oregon made Rogue Creamey cheeses through Neal’s Yard Dairy. Their Rogue River Blue won the World Cheese Awards in 2019!

No. Every kind of cheese imaginable is made in US, including original cheeses with no European antecedents. But the American approach to promoting cheese is definitely lackluster. This is a great magazine that talks about all cheeses, but has good representation for domestic. culturecheesemag.com
I made one in a workshop I took once, but it’s not something I make. I make an aged cheese that’s almost like tomme (and just won a Silver medal at the World Cheese Awards!), 4 bloomy rind cheeses including one with seaweed, and a mild blue cheese. www.lakinsgorgescheese.com
