I wish to be a person with a huge stash of all purpose flour & one way you can make that even more versatile is by adding 1Tbsp vital wheat gluten per 2c APF, in recipes that call for bread flour. Most of the time that doesn't make enough of a difference to bother, but for bagels I suspect it does.
Today's adventure in Eating From The Pantry is baking bagels. Wish me luck, although I'm using a King Arthur Flour recipe so I hardly need luck.
