I’ve done them a few times, when I’d done the initial couple of weeks, from memory I put them in a weaker brine with rosemary, chilli, etc, and bottled them, putting a thin layer of olive oil on the top to keep the air out. Then put at the back of the cupboard for a couple of months and eat
