In the end it depends on what 'work' you are getting them to do. They are extremely good at pumping out corporate memphis. If you are relying on them to make factual statements, I would double check everything.
If you're using 'unreliable' as 'totally defective' then yeah I'll agree. They have some legitimate uses that may or may not offset the slew of negative externalities that the industry around them has caused.
I think that we're missing each other on our targets though. When I see the word 'unreliable' I take it to mean that you can't rely on them in the same way that you can't rely on a stranger on the internet for legal/medical advice.
I'll agree with you on the point that there are definitely humans who display LLM-like characteristics: if someone is of a certain age and I say "Dental Plan" to them I can predict the next words to come out of their mouth because it's in their training data.
Sure, at some point we will likely have a breakthrough that results in something similar that doesn't have the limitations of LLMs, but that's akin to saying eventually a horse will turn into a car. Fundamentally different things that serve similar purposes.
