Everyone is selfish to some degree. I don't personally find telling people they are selfish or that I view myself as less selfish to be an effective strategy to change behavior but I'm not a behavioral economist.
A vegetarian diet is definitely cheaper. But a lot of people prefer chicken (or beef) to lentils, for example. New ways of thinking about vegetarian meals - easy, fast, cheap, and delicious - helps.
