I will say if you want to watch fujiko mine. While it doesn't have any direct continuity with other lupin iii stories it does expect that you are at least familiar with the characters.

Of the top of my head on top of bebop and champloo, baccano is a great 1930s prohibition era show, a woman called fujiko mine is this weird psycho sexual thriller heist show, monster is a great serial killer drama. There's a tonne out there it's just usually drowned out by shonen fight boys.

Problem I see a lot of people have getting into anime when their like really into movies or whatever allready is that like 99 percent of the 'must watch' anime is essentially kids shows. Like they may have blood and death but they're like young adult fiction.
