I love how the snow becomes matte as we move closer to the thawing time. It’s no longer the seemingly infinite number of sparkles spread out in puffy drifts along the trail but a sagging, soft blanket moving back into the earth.

I wonder how many times I’ve made this meal in my life. My grandmother made it from the time I was an infant, and my first cooking memory is flattening the tortillas.
Sometimes it’s fun to experiment, and sometimes it’s fun to make a meal from scratch that you never need to look at a recipe for.
