I haven't done a roasted-vegetable sauce, no, but I might try that with one of my habanero sauces. I make a couple of different varieties with a Belizean-style carrot-onion-garlic base; I can see where caramelizing the sugars in the veg would change that flavor profile nicely.
This happens when I steep the peeled garlic cloves I buy at Sam's in vinegar with the peppers for my hot sauce. It's because the garlic was grown in soil that has isotopes of copper in it. The acid reacts and turns it blue. Still fine to eat though.
