5 oz / 150ml hot sauce bottle with a black top on on a red and black background. Label has a chain hanging vertically, with the last link broken. Below the broken link is a mango. The sauce is named "Mango Unchained". The background repeats the chain motif that's on the label.
I might have a problem. Or I might be a bad person. People say I only make #hotsauce for the names.
They may be right.
Nice mango flavour with a good punch.

390g Hand picked #hotpeppers from Canada Linc Farms
265g Mango
75g Ripe (yellow) Lime
3.5% brine
Brown sugar to taste

An assortment of 12 hot sauce bottles in various colours (brown, yellow ,peach, orange, reds), some with small numbered batch labels.
One sample from about 1/2 of this year's #hotsauce batches, 2 month #ferment. Unfortunately lost batch 132 to contamination. Nice range of flavours & heat. Fruity to savoury, medium-low to scorching. Most #chilis from Canada Linc Farms. Some from our garden.

I think it worked.
Today I learned that when you #ferment cacao beans with #chili peppers, then roast the beans, they are absolutely delicious. Chocolaty, spicy. Amazing.
The pulverized beans will be added to a #hotsauce made with chocolate #habanero and black lime. Name may be Hot Cocoa or Holy Mole.
Nice Haul! Wish I had the space and climate to get something even nearly approaching this!

Haven't sampled them yet, but apparently they're on the same level as a serrano pepper depending on the individual pepper (10K-23K Scoville).
I admire, but cannot understand, the restraint.

With over 20 batches in various stages of #fermentation I'm running out of room, and vessels. And I still have some from my garden that need picking and saucing.
I don't have a problem. I can stop any time.
But why would I want to? ๐
