Some people for example have strong opinions about how the handle is constructed & fastened to the pan. More expensive pans may have more layers as well that could give better/more even heat control. But just give it a go & see what you think, then you can start collecting ideas about the next pan.
I think, certainly, for your first experience with stainless steel, go with the affordable option. Learn how to use stainless steel and see what you like and don't like about the less expensive pan. When you're ready to upgrade, you can look for a more expensive SS pan that improves upon things.
Hey Kyle! I'm sure there are good pans in the replies here but be assured you don't have to spend a lot to get good results. Stainless steel cooking is 70% technique, 15% using appropriate oils, & 15% quality of pan. I got a $23 set of two Tramontina tri-ply clad pans from Costco & they work great
