It obviously sets a dangerous premise, because it's incredibly easy to memorize the phrase "avoid N-gons at all costs", so sometimes you never even bother learning about them on your own after you've finished the course and have a better understanding of 3D, because the teacher said to avoid them

I suspect that teachers usually don't explain N-gons because they would need to give beginners a huge amount of context for them to properly understand it anyway, so it's easier to say "just use quads", because at that point a beginner is just trying to grasp the basics
