I think tightening up the ending was a good call, really my biggest gripe is that they cut the community aspect of the story, which I felt was the real focus of the manga
The carnivores no longer take it upon themselves to tear down the black market out of complicated feelings towards herbivores
The mayor marks the black market for demolition for the olympics
Everyone claps for Legoshi instead of addressing the black market issue
The baby bird dies rather than being sent to a foster home
Haru no longer proposes to Legoshi
Haru no longer immediately divorces Legoshi
Juno doesn't get to psychically torture Louis in the epilogue
Melon dies
The scene where carnivores show solidarity with herbivores in a blackout during a riot has been cut
Louis no longer urges people to look at the black market and ackno that it's natural for carnivores to desire meat
Legoshi is no longer called a potential Beastar
Melon's dad has been cut from the story
Legoshi's grandpa has way less to do
New plot arc involving synthetic meat that isn't synthetic

Just reread the Beastars manga's last volume as a refresher. I really like how it ended, there was a lot of heart put into this.
If you don't want to read the manga but want to get a better idea of Paru's writing style, the Sanda anime is a really good adaptation of her work that captures the style and pacing of the original.
Overall I prefer the original writing and characters in the manga. Especially Haru's character. She's way more of a punk in the manga. The limited expressiveness and the shift of focus to legoshi made her feel more subdued in the anime.
