I've been told that inulin is the part of jerusalem artichokes that causes digestive issues, but I'm not sure about that because artichokes proper do not bother me & they're also high in inulin.

Is elecampane tasty? In one version of Rapunzel I read, the notes suggested the craved vegetable was elecampane (though it seems to me there's a lot of brassicas with names that are similar to rapunzel)
