You could also put them with oil in a pan cut side down until they really brown, flip them over, cook through, then toss with whatever you would have roasted them with if you don't have time for roasting. I also peel off the outer leaves, cut the stems, cut in half then score where the stem was.
You can roast them with whatever flavors you like, really. I either do gochujang, soy, Sesame oil halfway through roasting or mustard, any oil and red wine vinegar, both with brown sugar. Or sometimes just salt and pepper with a dried herb blend then melt some Swiss or gruyere on in the last 5 mins.
