Costco gas above $3 it’s so over

BH! Some nice bitter greens and a starch is all you need with it! Being in MN I have to recommend the wild rice!

I keep a fryer on the counter because it’s handy, so they got deep fried after coming out of the oven. I bet you could skip this and just put them in the pan over high heat to recrisp

The drippings, with some sugar, balsamic, white wine, stock and finished with butter make a really good pan sauce

I got a pack from Costco with eight ~10in strips. I scored the fatty side and cut them in half, so ~5in pieces, probably an inch or so wide.

I salted and peppered on all sides then put them in the pan fat cap down, turned it to medium until golden. Then into the oven

Score the pork belly and crisp the pan in a pan from cold. Then roast at 280F for 20-40 min depending on the size and finish in a deep fryer. Works like a charm!

If you’re gonna celebrate Purim you should do it with good wine. Which calls for good food. So we have pork belly with wild rice risotto, braised radicchio with Berbere and orange marmalade, and a fennel & jicama salad
