A good reminder
Substitute applesauce (while you can). I learned that in a health aid training course.
Applesauce, pumpkin, banana and aquafaba are decent substitutes. I think it's 1/4 c. per egg for each.
One time I substituted Greek yogurt for eggs in an oatmeal cookie recipe - it was really good!
