3 & 1/4 years ago, with no warning, a brilliant orange farm cat wandered over from the draughty barn where he'd been living, in rural Cornwall, & decided he wanted to live with us instead.
We decided to call him Jim.

Scored on a bias, which resulted in a bit of an ear. Scoring was uneven, however, so some doming occurred. Changes resulted in a slightly smaller loaf but overall better imo. Small daily improvements are all one can ask for. The experiment continues

Today's sourdough. 4 yr old starter, no knead/stretch & fold, 36 hr cold proof. Made a couple of procedural changes. Have been using a preheated cast iron skillet with a bowl as a lid, this time was uncovered on a preheated stone & tossed a couple of ice cubes in for steam

I'll be 57 in a month, I feel ya. I used to do a physical job (forestry field work). My day involved a lot of hiking and hill climbing, often thru thick brush, no problem. Nowadays if I blink wrong my back might go out
