Gibson made some funky Les Pauls in the 1970s, like this Recording model. It's got two low-impedance single-coils designed by Les himself. Each one has its own volume and tone control. There's also a 3-way pickup switch, a phase switch, a high/low impedance switch, and a 3-position blade switch that controls a tone circuit. If that wasn't enough, the guitar also has a Bigsby.

The Music Man St. Vincent model is one of the nicest modern designs I've seen. The body is shaped kinda like an asymmetrical bowtie. It's got 3 mini humbuckers, one volume and one tone control (with triangular knobs!), a 5-way blade switch, and a modern version of a Strat-style trem. It's also got the Music Man signature 4/2 split headstock.
