Hmm, I was somehow able to change the settings in 25-degree increments, but I don't recall how (and probably don't have the same model as you).
I, too, hate my Samsung appliances, but I found that I was able to adjust the thermometer in my oven and get it properly calibrated. Check the user manual for your model. I will never buy their products again, but at least this one issue was resolved.

If you're interested, a quick way to block knitting is to pin to shape dry, then pass a steaming iron over the fabric, being sure not to flatten the knit (gentle hover a couple mm high). The steam is all you need to set the stitches and shape.
