Right on! I too am still on that journey. Feels great when someone you cook for asks for your recipe especially after awhile if you didnt use one. That said, it's not mexican but if you want one of my favorite recipes, this one isnt too bad if you have a instantpot thecozycook.com/homemade-ram...

Yeah, I go thru about 5 dozen a week between the kids and I. About to buy some chickens and give the kids a new chore to check the coop.
Always high where I live in Alaska. But this is the highest I have seen yet.
Its been a rough week as a civil servant, for anyone in a similar boat. Hang in there, we are all that's left to be a guardrail for humanity. Be kind to your neighbors and coworkers being targeted. Goodluck all.
