Players should be free to play their characters as they choose. At worst, I define Law/Chaos & Good/Evil as Steadfasteness/Spontaneity & Selflessness/ selfishness. That does the trick.

Basing an entire adventure or encounter happening on players making a roll is just bad practice.
Instead, establish the world/surroundings/barriers to entry, then make it crystal clear there is no wrong answer. Your players WILL surprise you.
