It’s Friday night, and I am enthralled by this paper—might be in my top 3 all time faves. Who knew cooking an egg in 2 pans of water, under conditions tightly controlled with a food thermometer, then analyzing with IR spec and sensory input on parameters like ‘shininess’ could be so entertaining?? 🐣
