Doburoku is by the way - a fantastic product full of fruity flavours and umami. I'm considering releasing it in the Norwegian marked.
Any good news?
The Meiji government needed funds for modernization and found a reliable source in liquor taxes. Centralizing production with licensed brewers gave better control and taxation. Homebrewers were mostly making doburoku (un- or roughly filtered cloudy sake) - which is now getting a bit of a comeback :)
He told me he mostly sun-dried it this year :)
