There was some really good points to this recipe. Microwaving to remove the moisture is good food science. You season the eggplant at several points so itβs packed with flavor! I think my issue was just textural. Why go to so much trouble frying the EP just to get them soggy with sauce?
A white pan was browned melted mozzarella over layers of fried eggplant and homemade tomato sauce.
I made the Food Labβs Eggplant Parm Casserole tonight. It was both some of the best eggplant parm Iβve ever had and something I will probably not be making again anytime soon. Not sure the juice was worth the squeeze. Might try deconstructing it next time if I do it make again.

So maybe a better way to think about write what you know is to write what interests you, be it physical, philosophical, or emotional. Tap into your experiences, feelings, passions, and the people you know. Thatβs how your bring authenticity to your writing. Itβs how you say something.

So for me, while write what you know *can* apply to things youβve done, itβs much more about tapping into your feelings and thoughts. Charlie Kaufman has, to my knowledge, never had part of his memory erased. But he tapped into the emotions of a breakup in Eternal Sunshine of the Spotless Mind.

People tend to talk about the loud, dramatic, graphic scenes on The Pitt, but last nightβs episode was a masterclass in balancing those with these incredible quiet moments. And all those quiet moments play so much more impactful because they contrast the chaos of the show. Amazing stuff!

Anna Lytic gets up in the afternoon and pokes holes in everything. Sheβs useful. But not for a first draft. I try to lock her in the basement of my mind until itβs time for us to work together to fix something.
I grilled them outdoors. Used my Weber propane grill and kept two of the three burners on to get that hot side / cooler side effect. About a minute on each side of the bok choy on the hot side, then 3 minutes on the cooler side. Came out great! Itβs entered the dinner rotation.
Credit to my amazing wife for this one. She found and made this spam and rice casserole recipe. We didnβt bake it and it ate like a deconstructed musubi. Delicious!

I posted a thread about midpoint twists this morning. Felt kinda ridiculous but figured it might be a welcome distraction for some.
Thereβs a statute of limitations on spoilers. If itβs been more than 10 years since it came out, no one can be mad about spoilers. Thatβs not just my belief. This was decided in u/MovieMaven v Reddit Nerds and is now settled law.
One of my favorite midpoint twists is the harbor attack in Jaws. Brodyβs son has been threatened and now Brody must face his fear and go to sea.

So a midpoint doesnβt always have to have the exact same impact. The important things are that it raises the stakes and makes the audience ask the question, βWhat happens next?!β
