Something I found interesting I never really thought about at first is good UI design. It can really make or break immersion into a game's world and making something simple and readable is never as easy as it seems (without being boring or bland at least)

I've been too busy music making to game dev lately, but I'm looking forward to putting my everything back into it in October!! Happy game deving 😼
I see what you mean. The way I'd go about it would be to just search for a list of every term and technique I can find, then start picking them off the list and finding a video about someone explaining what it is and how it's used. Not perfect but it could get you somewhere
Music theory for gamers has some pretty good beginners stuff and if I remember correctly goes into more of the stuff you were talking about later in the course. Good luck on your search and with making music!!
Five years later of making all sorts of cover songs and now I can make some damn good original soundtracks based on feeling and experience alone, without knowing the technical terms for anything. That being said if you do want to learn all that proper, youtube is a good place to start
As someone who never properly learned anything about music theory, you don't really need to. What worked for me was listening to a bunch of similar songs to what I wanted to make, dissecting them to see what made it sound the way it did and why I liked it

More than likely though it's just Youtubers being lazy and not wanting to take the time to make a good thumbnail/pay someone like an editor. Even a screencap of the game would be better than ai slop though 😞
