My PhD was at the interface of physics and chemistry so I've always been split between ACS and APS. I've been impressed with APS's response lately. Most recently: www.aps.org/about/news/2...
I had mine in LaTeX for a long time and I migrated it to word. I think word is easier to update and maintain for it, and less formatting hassle. You can also make word look like LaTeX if the aesthetics are what you're after 😅
