Have you took a look to the protondb webpage? That game shows up as golden, so you should be able to play that game. Maybe you can find some hints there to make it work for you.
Nvidia, at least for me, will never be a small thing. In fact I replaced my RTX3080 with a AMD RX9700XT because I got tired to play lottery every time there was a nvidia driver update. After the replace, so far, I can install all the updates I want. I got tired of Ubuntu too and switched to arch.
If you stick to Steam you will proably be fine. Avoid those coming from EA or EPIC at least because their games usually have anti-cheats that won't run on linux.
I played also Palmworld, Astroneer. And some I remember having problems with were Overlord and one of the The Binding of Isaac (this one hurt :-( ). But I wouldn't say that gaming in linux is still a pain.
One more time I must be the exception that proves the rule (I am because I use #ArchLinuxBTW being older than 50 years old). I have 165 games on Steam and although none of them are a triple A I can tell I play Satisfactory (windows only game) with absolute no problem.
