The encase would be the hard part. Would have to go up to a 3" balogna case, flattened the filling inside, the wraps between links would make them roundish. Then the pre-cook and removal of the casings.
Could try, guy I do deer processing with wants to go into hotdog product next season.
Basically you are talking about a ham loaf that has been made into patties. Hot dog is just a pastier / finer grind.
