Getting some flashbacks to myself and my siblings as children on summer holidays at the market in Listowel, where my mam would purchase a tub of butter and some cheddar cheese for the bemused Crêpe-stall man (who was from Paris) so that he could make us "dinner pancakes".
My own (likely flawed!) intuition is that we still heavily underestimate both the fragility of the model's internal representations (it's sophisticated enough to defy algorithmic verification now), and the frequency with which reality presents novel (although seemingly similar) examples/phenomena!

Incredibly so, and the fact that we have gone years and things are still this muddled says a lot to the effectiveness of their marketing/pr/profoundspeak! That coy little 'what have we done' is especially grating given their internal insight into all the blatant inconsistencies in their systems!
I'd also note that the idea of 'training' models is, in some sense, an admission that the desired system cannot be explicitly 'built', which probably factors into things!
It's a kind of split meaning isn't it - we know how they 'work', but we don't know how the phenomenon they are modelling 'works', so it's all a bit of a mess!

Not to be positively suggesting spending even *more* money on the problem, but I've found game-streaming services (linked to extant steam acc) to be pretty handy for Mac these days, often simpler than emulating, and latency/cost is pretty competitive at this point - might be useful at some juncture!
