My disagreement would be that Ars *is* set in that period, because the 1220 date is arbitrary, and even if the story seeds in books are centered about events in that period, you are expected and encouraged to run the game in whatever other period you want. The core book tells you as much.
Hermetic and Historic backgrounds are kept well separated in all of the Tribunal (source) books. On the former, you don't need much adjustment. On the latter, you just research a bit on the period you need, which would of course be mentioned, albeit not expanded in detail.
You can play Ars Magica at virtually any period between 767 and the Reinassance. Just because the default starting point for 5th is at 1220 doesn't mean you can't play wherever you want within the medieval paradigm :D

The problem with Apocalyptic Demon Threat narratives is that it's easy to use it as justification for fascism and twist morally grey complexity into black-and-white absolutism. If after Rogue Trader chaos was never added, the whole vibe of the story would be different, and probably more interesting.
