Plant-based yogurt with a swirl of frozen cherries.

Since oats are out for breakfast, I've started eating Kit Hill unsweetened vanilla plant-based yogurt. It has 17g of protein per serving, then I mix in some protein powder for added protein. Then I add some berries. Looks kinda gross, huh? LOL. It's good, tho. #diabetesmanagement #vegan

1/2 a baked spaghetti squash with 1/2 cup pasta sauce, an Italian-style tofu marinated in an oil & vinegar mixture (thx, ChatGPT), a sprinkling of nooch (nutritional yeast). Fairly inexpensive, easy, & so good.

I bought some Lion's Mane mushrooms at the local farmers market on Saturday. I've been seeing where people pull them apart and fry them like chicken, so I decided to give it a try.
