I've heard that seitan can really accurately capture the texture of pulled pork or shredded chicken! As long as you don't have anything stopping you from consuming wheat/gluten, and you can find a vegetarian BBQ sauce (some have Worcestershire which has anchovies in it), it might work for you!

Here's mine:
1. Make rice
2. Mix ins: drained can of tuna (or a couple of the packets if you don't feel like needing to open a can or drain it), kewpie mayo, sriracha, soy sauce, and furikake.
3. Optional: take sheets of nori and tear it into pieces to eat with.
Spicy tuna roll in a bowl. :)
