Auckland if you go to Miranda you might see some shore birds at a distance. Unlikely for Penguin at those places but possible Milford you might see something if you're lucky. Forested areas for Tui or Fantail. Are you going to Tititiri Island Bird Sanctuary in Auckland?
Pied Stilt, most estuaries in both countries
Tui is in most native bush in NZ (not in ChCh, especially Orakanui in Dunedin
Lorikeet, Cockatoo and Brush Turkey are all over Sydney. Manly is nice for Brush Turkey. The parrots just fly around everywhere, including the Gardens right beside Sydney Opera House
Needletail is rarer now, just luck!

Not sure where you are going in NZ?
Oamaru is best place in NZ to see Little Penguins, they do a tour but they are just wandering in the car park at dusk. Otherwise you Might see one on a harbour cruise in Akaroa near ChCh
Wrybill at Lake Ellesmere but this is a big lake!
