also I'm assuming if one uses the stock thermistor it would only go up to the stock max temp of 300, and maybe the PT1000 goes higher, I guess it would be nice to get set up to be able to print something like PPS-CF if I get a real high-temp hot end...

I feel like, reading the wording on the site, if I get the one with the B3950 thermistor it wouldn't require rooting my printer? But idk I'm far from knowledgable that's just what it seems to be implying by only saying the PT1000 DOES need the printer to be rooted:
