A couple I’d recommend are Lost Stars, the High Republic books (though there are A LOT of them so it’s a daunting task, but a great start would be Light of the Jedi), Dooku: Jedi Lost, Inferno Squad (which is especially impactful if you’ve played the BF 2 story), and Rebel Rising

For me, pretty much every one of the console LOTR games. Their gameplay was so damn fun that I could look past the graphics every time. That or Battlefront 2 (2005)
Probably most of the Royale shooters (I say this as someone who plays Fortnite with friends, but moreso for them than myself) but yeah, I just never got the appeal for the most part
If “win” means “beat the story” then I’m going with the Return of the King video game. It’s just such a reliable awesome hack and slash game to me
Probably Call of Duty: World at War: Final Fronts for the PS2. I never finished it because it was so janky and laggy, the gameplay just straight up was not good
