I've been trying to eat less beef lately, and I don't know if this could help you, but I've been trying to do it in a v low key way; just when the option to eat beef comes up, I'll check to see if there's another option available & weigh up if I'd be ok with the alternative. Often I am!
I grew up vegetarian & even though I eat meat now I find it generally non essential in my diet, especially my cooking
Non meat meals I regularly eat: lasagne (as good if not better w no meat; use lots of veg!), pasta with pesto or veggie red sauce, dal & rice, dry potato curry & rice, donburi (things on rice - rolled omelet, pickles, & rice sprinkle are extra good), ratatouille or lazy ratatouille... Lots more!

Not sure if this is helpful but I found & started using the McGill Pain Questionnaire to describe my own chronic pain (especially migraine) to my care team, when I started to feel that other methods (eg. 1-10 pain scale) didn't tell the whole story
