Seconding the slowcooker/crockpot method - best thing is to make a LOT (hardest part is chopping all the onions) and then freeze. Only way I’ve ever reliably had caramelised onions in home dishes.

what annoys me most about Sanderson is that he is honest to god a person I devote 0 brain space to 99.9% of the time, but then he keeps having hideously bad takes about WoT and unfortunately other people think his takes are somehow more profound, and...here we all are.
I've never read any of his books because the way he approached WoT made me think I would have this problem, and my wife (who does read them) was like "yeah you wouldn't hate them but they're not that great" and you know, life is short.
