the idea with the yogurt is to basically make "chipotle tzatziki". it's tasty, and it's not nutritionally vacuous like dressings tend to be. re vinegar, there are other ways to add a little acid to the taste. if nothing else a little salt could work, but i lean toward adding sour fruits/juices.

tzatziki is good. i've also done Greek yogurt mixed with chipotles for a more "southwestern" flavor. but i find that i prefer salads with just a little oil and vinegar. if you put enough flavorful stuff in there, you don't really need a dressing. dressings are just to add flavor to weak salads.
