I've seen a fun little hack that I've been meaning to try, where you set a fine mesh strainer over a pot of boiling water, pour the egg into the strainer and cover it with a lid. It ends up reeeeally darn close to a poached egg with a runny yolk. Nonstick spray also helps on the strainer apparently.
