Crust 10" springform pan 1.25c crushed biscuits 1/4c melted butter 1/8 tsp salt 19 biscuits around Filling 2c heavy cream, whipped 1 pkt Knox gelatin prepared 1 brick cream cheese (left out for 30mins) 4tbs biscoff spread melted 1/4c icing sugar 1 tsp vanilla Topping Rest of jar of biscoff spread melted, for topping 1 cookie on top 1. Place cookies around the edge around the springform pan. 2. Mix crushed biscuits, butter and salt. Press evenly onto bottom of springform pan. 3. Prepare Knox gelatin according to packet. Set aside. 4. Whip heavy cream to peaks and set aside in fridge. 5. With a mixer cream cream cheese with icing sugar and melted biscoff spread. 6. Once incorporated, mix in vanilla and gelatin. 7. With a spatula, fold in whip cream. Then add in to springform pan. Level mixture. 8. Melt the rest of the Biscoff spread in a microwave (about 30-45 seconds). Let cool for about 5 minutes. 9. Pour the spread on the cake. To spread it around evenly, just pick up the cake and let it flow around. (this was much easier than using an offset spatula) 10. Place a Biscoff cookie on top. 11. Refrigerate for at least 4 hours to let the gelatin to set. 12. Serve and enjoy!

I live in a citrus area in Southern California. I substituted Meyers Lemon 🍋 for orange 🍊. Use extra zest and add nuts ground mixed nuts to the icing.
