(TL;DR)
I think Daedalus would be ULTRAKILL's final Prime Soul because it completes the story around Humans, it makes sense with the themes around the other two Prime Souls and their origins, and it has a fitting thematic finish of facing your maker, which would complete ULTRAKILL's story well.
To meet your maker and finish what was started.
You, playing as V1: The Creature of Steel, the Child of Man, and the Creation of His, you are left to end the very person who gave way to your life, and only then, will everything be complete.
3. A Thematic Finish to ULTRAKILL as a Whole
If Daedalus were to be the Final Prime Soul, Thematically, it would be the one boss to complete the entire story. After challenging and contending against both Heaven and Hell, after perfecting everything and completing it all, your final challenge is-

And I imagine that Daedalus would be a great and renowned Inventor amongst Mankind, bringing a new era of Technology that would help it rise and progress further, unlike ever before.

2. The theme of Prominent Greek Figures and Creators
When it comes to who's selected for Prime Souls, it's interesting to see the processes of who's selected and what role they have in ULTRAKILL's story.
(note: this is mainly just speculating how Daedalus would narratively fit into ULTRAKILL's Lore, given what we know currently.)
The only remnants of Man left, besides their stolen machines and designs in Heaven and Hell, were the two robots made to counter the war and to preserve the peace: V1 and V2.
But when mankind began to contend with themselves, they eventually began to combat one another in the event known as the Final War. After creating so many machines to end the war, Man ended up destroying themselves, and the remnants of their machines would be used by Heaven and Hell.
Man was only left with his blueprints, and as a result, they spent the next 1000 years, using his findings and making what they could to finish his work and add more to it. They'd begin doing expeditions to Hell in search of more resources, they'd do more and more to complete his work.
began forming into a Prime Soul, and out of fear, they would lock him away within his own machinery, and bury his body deep away, taking his machines and ideas along with him, Heaven began to adapt his own findings to their own. They made the Labyrinth, they began making machines of their own.
Out of violence, malice and horror, they would send down Gabriel to strike down Daedalus to stop him from innovating and creating more. Daedalus was slain and Heaven didn't have to fear...until they noticed that he began forming into something much stronger. Due to his power and will, Daedalus-
begin to fear him, as he would start creating machines that aided man, and they would see these machines as dangerous in the potential they have to cause mass destruction. It wasn't Daedalus' intention, since he only ever had a burning, ever growing Will to progress mankind ever further.

My theory is that the boss for P-3 is going to be Daedalus.
Daedalus is one of the more important Greek Figures that isn't related to Gods, being a crucial inventor, architect and sculptor, he created many things, that would include the Labyrinth for the Minotaur and Wings for himself and Icarus.
