Preventing foodborne illness: You might have heard the saying, “don’t eat raw oysters in months that don’t have an ‘R'." That’s because of the bacteria Vibrio vulnificus. Can we better forecast outbreaks?
They saw vibrio coming: LSU researchers have developed an AI-assisted forecasting model to predict Vibrio levels in coastal waters and in oysters.
They stopped vibrio in its tracks. By tracking conditions, especially solar radiation levels, up to 80 days before oyster harvest, the new model guides recommendations on oyster consumption.
Cool weather means it's time to enjoy oysters! 🦪 Months with an "R" are safer for enjoying oysters without a risk of bacterial contamination. But why is that, and how can we better predict exactly when oysters are safe to eat? 🧑🍳
