Last weekend, I had a great time learning to safely pressure can fish at a UCCE Master Food Preserver continuing education event at UC Davis. The left jar is salmon, the right jar is steelhead trout. I'm cracking open the salmon tonight to use in a Tuscan pasta recipe! Yum!
Definitely stay away from potatoes! Unless you do the whole soaking process to reduce the potassium.
