So despite all the work and finesse and expertise and lucre that it takes to run a sportsbook, the load-bearing part of why gambling exists at all is because of differences in knowledge about those probabilities, differences which are entirely external, structurally.
The probabilities themselves are incredibly interesting things, because to compute them to arbitrary precision is in essence to understand the sport completely, which is a sort of silly way of formulating why I find my job so satisfying, because it's research about a part of the world I like.
But the quantitativeness of sports at their heart is part of what makes them such a natural fit, structurally, with gambling. The probabilities (of who will win, who will score first, &c.) that gambling is based off are themselves are more sensibly-defined objects when they're about sports.
