In my questionnaire I send to copyediting clients, I show them both ways, tell them which is β€œcorrect” according to Chicago, and let them choose. Many prefer the look of the single-character ellipsis followed by the space. (And they like that they know how to do it themselves.)

It’s a very common choice in indie (self-pubbed) books, I think in part because it takes more technical knowledge to create a non-breaking space, whereas MS Word will autocorrect three periods to a single ellipsis character.
