Buckwheat honey syrup (~1:1 honey & water) with a tablespoon of dried rosemary I grew. I intend to use this for cocktails. Then maybe I'll recycle it into an oxymel, yea? I've mostly seen people using apple cider or white vinegar, but maybe a thick balsamic vinegar might be more appropriate here. ๐ฏ
