There are four primary acceptable uses for em dashes. Em dashes indicating an aside. This is information that expands on the main sentence, but it can be cut from the main sentence without rendering it grammatically incorrect / incomplete For example, this is correct: I use em dashes — finnicky little creatures — whenever I want to add extraneous information to the main sentence. Cutting "finnicky little creatures" does not impact the logic or grammar of the main sentence. 2. Em dashes indicating dramatic emphasis. This is information that you want to draw special attention to, by literally separating it from the rest of the sentence. This use case almost always uses a single em dash, cleaving the sentence in two. I can also use em dashes for emphasis — but sparingly, so it maintains dramatic impact. The second use case should generally keep the main sentence grammatically correct, but the meaning changes based on what comes after the em dash.

3. Em dashes indicating a thought cut off. E.g. characters interrupting each other or a stream-of-conscious narrative cutting off in the middle of a sentence, for dramatic effect "Please don't interrupt—" "But I like to interrupt." 4. Em dashes indicating simultaneous action with dialogue. These em dashes occur outside the dialogue "I definitely remember" — she quickly edits to add another — "all the use cases for an em dash." Spacing around an em dash is stylistic, just be consistent about which you use (yes spaces or no spaces). The exception being that em dashes used to show an abrupt end to a narrative or dialogue sentence generally do not have a preceding space. ~yay grammar~
